Gluten-free Meatloaf


2 lbs. Ground Beef

1 Egg
3/4 Cup Old Fashioned Oats

1 can El Pato Salsa

1/2 Cup Diced Red Bell Peppers

1/4 Cup Diced Onions

1/4 Cup Chopped Roasted Green Chilli

Sea Salt

​BBQ Sauce (our favorite--Stubbs Smokey Mesquite)


Never thought meatloaf could taste this good!


Mix all ingredients with the exception of the BBQ Sauce together in a bowl. Press meat mixture in pan with spatula and coat with BBQ Sauce.  We like to cook this in a cast iron frying pan but a medium size baking dish will do.  Bake at 350 for 1 hour.  Turn oven on broil and let cook until a slight dark crust appears (approx 5-8 minutes depending on the temperature of your oven).



You don't have to cook fancy or complicated masterpieces-just good food from fresh ingredients.

Mamaw's Thanksgiving Dressing


2 lbs. Ground Beef

2 1/2 Sticks Butter

10 Chopped Green Onions

4-6 Diced Celery Sticks

4 cans Chicken Broth

2 Bags Mrs. Cubbison's Herbed Dressing

1 Tsp Sea Salt

1/2 Tsp Black Pepper

1/2 Tsp Garlic Powder


To most, Turkey is the main course on Thanksgiving, but to us, it wouldn't have been Thanksgiving without Momma's dressing!


​Brown ground beef with salt, pepper, and garlic. Then add butter, green onions and celery.  Cook down and mix in breading and chicken broth. Cook and stir until dressing meets desired consistency.  Pour into 9x13 baking pans and bake for 25 minutes.

BBQ Brisket


Half a Brisket

4 TBSP Worcestershire Sauce

BBQ Sauce (our favorite-Stubbs Smokey Mesquite)

The Secret to tender BBQ meat is to boil and broil!

Cook brisket in an oven or roaster with water

enough to completely submerge meat at 275 degrees for 15 hours.  Keep checking to make sure there is enough water to completely cover the meat!  After 15 hours cook brisket at 350 degrees for 3 hours.  Turn off and let cool for about 1 hour. Remove brisket from roaster and cut in one inch portions cutting against the grain.  Place meat in a 9x13 baking dish or the like, just as it was before being cut.  Cover with BBQ sauce and sprinkle with ME Cattle 24/7 Seasoning for Everyday Fixin's. Broil in oven until a slight dark crust appears on BBQ meat (approximately 12-18 minutes depending on the temperature of your oven).
